Lentils

Lentils play an important role in shifting diets towards more plant-based options and expanding the menu. They are not only simple, quick, and easy to cook, but also standing up well to cooking and freezing in batches. Additionally, lentils are versatile and can be used across the menu and day parts, from breakfast to desserts and everything in between. Nutritionally, lentils are high in protein and fiber, while being low in fat, making them an excellent choice to extend or replace animal protein in a variety of dishes. Lentils are among the most economical plant-based protein choices, and are applauded for their sustainability benefits.

Focus for the Dutch food service sector is on Red (Whole and Split) + Green (whole) lentils.

Lentil Production

Canada is the world’s leading producer and exporter of lentils. The province of Saskatchewan produces 95% of Canada’s lentils. Canada only began growing lentils in the 1970’s – now there are over 5,000 active lentil farmers in Canada.

In Saskatchewan, lentils are planted in early May. Lentil plants grow approximately 24 inches tall, with the seeds being produced in pods attached to the plant. There are between one to three lentils per pod. The lentils are harvested in their dry form typically in mid-August.
